(careful about double posts) I use standard stick glue for my pepakuras, sometime gel glue, and when I want someting complex to stay in place I sometimes use hot glue
the stick glue problem is you got to wait a bit for the pieces to be solidly glued
 
well I use hot glue only in pieces I really want to stay in place when other glues fail, and often just as a reinforcement, as in complex pieces.
otherwise if you're patient enough usual glue is perfect
 
I did my entire helmet with hot glue... turned out pretty well!

That being said, and after reading some more, I'd probably use super/Krazy glue if I were to do it again.
 
I've been using copydex(a solvent free white contact adhesive that smells fishy). It holds paper together quickly but you can still readjust the lines before it sets. It's really good for a beginner to pepakura like me.
It's usually sold in stationary stores if you think it may be useful.
