Let's say I don't care about the polygon look. I want to avoid sanding as much as possible. What do I do?

I see the typical steps would be to resin the inside and outside, apply Bondo, sand, sand, sand, and paint.

Let's say I just want to harden and paint it real quick without smoothing out the hard edges. Can I maybe just resin the helmet, and sand a bit, then paint?

That is something you can do, just resin the outside, rondo or fiberglass the inside, bondo, then prime and paint, the sanding and such to make it nice and smooth and such is really more dependent on the level of detail you desire.
