It will probably take 2-4 ounces to do the first outside coat. Dry. 4-6 ounces to do the inside coat, dry.

Another 4 ounces on the outside for your final coat. If you are fiberglassing it will take 8-12 more ounces to soak the fiberglass. That's a total of 26 ounces at most. A quart is 32. You're good.

Post pictures when you're done! Go slow and be careful of it drying the wrong shape.
 
The key is to not overdo the first coat.....if you drench the paper w/ resin, that's when it will have the tendency of warping. You want to seal the paper w/o warping. Once the 1st coat is dry the helmet has some rigidity and can somewhat resist warping when the next layers are added.
 
do two very light coats on the outside. let them cure thoroughly between coats. do two more light coats inside. again let them cure well between coats. then you can begin the actual glassing stage. This dual coat method helps provide structure to the paper so that warping is not an issue. Pretty much what Dirtdives said.

In addition to the multi-light coat phase, you can use Popsicle sticks or dowels to keep the framework from warping as well. This is a great technique if you have a hard time judging how much resin you put on each layer because of poor lighting.....bad eyesight.......arthritis...... oh wait...that's me.....never mind.
