I have tried a couple of different methods. With the simpler pieces (under 8 pages) I usually score it all, and then cut it up and fold one page at a time, and try to glue it together as I go. This gives me some time for the glue to dry before the next piece goes on; when I did all the gluing at once it wasn't as strong.
With the more complicated pieces I usually just score a couple pages at a time. I found that starting in the center and working towards an edge works much better. Its very hard to put those last couple of pieces on when they go into the middle.
And then there is an optional step I have used: Realize its the wrong size or not quite as well done as I would like and start over.
