Your signature can be found under your profile, at the bottom of the information tab.

As far as I know, signatures don't function on the new site like they did on the old one. For some reason, now they're only in your profile page, instead of under every post you make.

That is correct. The primary reason is simply expediency and ease of use for the reader.
